Lime-Marinated Flank Steak

Ingredients

  • 1/3 cup lime juice
  • 2 tablespoons GF soy sauce
  • 2 scallions, thinly sliced (I kept ours a bit bigger, we like onions!)
  • 2 tablespoons minced, fresh ginger
  • 1/2 teaspoon red-pepper flakes
  • 1 1/2 pounds flank steak
  • Foil
  • Sea salt and ground black pepper

Directions

  1. In a resealable plastic bag, combine lime juice, soy sauce, scallions, ginger, and red-pepper flakes. Add steak, and seal bag; marinate in the refrigerator, turning occasionally, up to 1 hour.
  2. Heat grill to high; place foil over grates. Remove steak from marinade, letting excess drip off; season with salt and black pepper. Place on grill; cover. Add some marinade to the top. Cook, turning once, until meat reaches desired doneness, add more marinade after turning, cook 4/5 minutes on each side for medium-rare on medium/high heat. Let rest 10 minutes before slicing.

We doubled this, put it in two freezer bags and did this as two meals. While they defrosted, they marinated. While this recipe is awesome, the meat was A LOT for our family. With flank steak being on the more expensive side, I'd recommend getting a cut sized appropriately for your family and their needs.
