Slow Cooker Cran-Apple Pork Chops with Rosemary-Garlic Mashed Potatoes

Cran-Apple Pork Chops
Ingredients: 
  1. 6 boneless pork loin chops (fat removed)
  2. 3 tbsp olive oil
  3. 2 tbsp honey
  4. 2 medium celery stalks (chopped)
  5. 1 medium cooking apple (peeled/diced)
  6. 1 medium onion (chopped)
  7. 1 cup cranberries
  8. 1 tsp ground cinnamon
  9. 1 cup GF chicken broth
  10. 1/4 cup brown sugar
  11. 2 tbsp apple cider
  12. 1/4 cup of apple juice
  13. 2 tbsp balsamic vinegar
  14. 2 tbsp spicy mustard (French's is GF)
  15. Salt to taste
  16. Pepper to taste
Directions: 

We used this as a freezer meal. Mix all ingredients together (except the pork) and divide into 2 (1)gallon bags. Add three pork loin chops to each bag. Seal, shake a bit, and freeze. If you're making it for that specific night. Split it in half. One half for the freezer, one half for the crockpot.


Rosemary-Garlic Mashed Potatoes

Ingredients:
  1. 5 lbs. of red potatoes
  2. 2 sticks of butter (unsalted)
  3. 1/2 cup of milk (I used skim, but you can use whatever you like) 
  4. Half a stick of butter (save this one) 
  5. Rosemary
  6. Garlic Powder
  7. Sea Salt
Directions:
  1. Wash potatoes
  2. Cut potatoes into quarters (or eighths if they're big). 
  3. Place potatoes into a stock pot full of water. 
  4. Boil potatoes until soft. (It took me roughly 30 minutes) -- I have a toddler, so it probably didn't actually take that long!
  5. Drain potatoes in colander
  6. Place hot potatoes in mixer using the dough hooks to really mash them up. 
  7. While they're mashing, put 2 sticks of butter in the micro to melt them. Ours took 60 seconds.
  8. Switch to your regular mixers in place of the dough hooks to get a creamier consistency. 
  9. As soon as you switch, put the 2 sticks of butter in with the potatoes and mix until you get a fairly smooth consistency. 
  10. Add 1/2 cup of milk (depending on your liking you may add more or less)
  11. Add rosemary, garlic powder, and sea salt to your own taste. I used about 1/8th of a cup of rosemary, two tbsp of garlic powder and a bunch of sea salt. I stopped measuring :) This is the glory of cooking, you get to taste what you make! 
  12. Since we had two toddler with us tonight, I put these back in the pot with my extra 1/2 stick of butter to keep them moist on top. 
We also had green beans with this. Steamed, seasoned. Done.

Best GF meal so far! We highly recommend it!
