Success!

Arianna and I have been taking a kindermusik class for a few weeks now. We're almost done. I started my GF diet on the 6th of December (about two weeks ago) and had felt better, for sure, but didn't realize the extent until today. I was able to jump around, swing Arianna, roll on the floor, and have fun with her and not even think twice! It has been almost 8 years since I was able to do anything remotely close to that. I'm still learning and making mistakes, but I'm getting there.

I have come to the conclusion that GF baking totally blows. I'll keep trying, though. I have another recipe for sugar cookies I'll be trying tonight (or tomorrow?) The holidays are making this tough on me, because I love to bake cookies, but I'm not being successful. Frustrating!

Overall, it's been going well. I'm starting to get over the fact that I can't eat certain things and I'm just sucking it up. It's not always easy, but what good things are? So here we are, less than a week away from Christmas, I have no cookies baked, but I feel awesome. Fair trade? I think so.

The hubby and I have found a wonderful recipe for banana peanut butter smoothies that we'd like to share with you. If you're GF: make sure you don't use PB that has been touched with gluten! I did that the first time. Now I have my own PB tub just for meeeee!

Peanut Butter Banana Smoothie Recipe
Serves two

2 bananas sliced and frozen
1/4 cup GF oats
1/4 cup peanut butter
3/4 cup milk (we used skim, but you could use any kind)

Put oats in blender and blend until they're powdery. Add remaining ingredients and blend until there are no more chunks of frozen banana. This is a super thick smoothie, be prepared!
