Yesterday I had my endoscopy. It wasn't too bad, a nice nap, some dizziness and some neato burrito later and I was pretty normal again. My stomach hurt for the rest of the day, but nothing unmanageable. I'm pretty sure I made it through my first day of GF relatively unscathed and generally successful.
We have dinner at club impact each week, and it was hard for me to not eat what everyone else was eating. Thankfully, Lester made my some tater tots that happened to be GF :) Woot! I dipped them in ranch and was a happy camper (until Matt decided to dip his GLUTENED CHICKEN NUGGETS in my ranch!) Then I had to get new ranch. He simply facepalmed after he did it ;) It's a learning experience for all of us, I suppose!
I made some very good gluten free granola bars for breakfast the other day. I dug into them yesterday (and this morning too). Here's the recipe:

They're really good and quite sweet, but there's no sugar in them. Simply the sugar from the natural ingredients. Tuesdays and Wednesdays are pretty rough (or will be) since we have club impact dinner and I teach lessons. This means I'll need to bring my own dinner along to these two events and let the hubby and baby eat normal people food.
I'm wondering how long it will take until I start to feel better (if this is actually helping). I don't feel as tired or in as much pain today, but I'm pretty sure that's all in my head. Today is day 2 and so far, I'm haven't messed up :)
